Gilpin Hotel And Lake House / Lake House, Knipe Grill and Gilpin Spice Head Chef
December 2022 - February 2024, Cumbria, Lake District
Michelin Plate / 2 AA Rosette / 5 AA Red Stars
Alongside running the 8-bedroom property at the Lake House at the Gilpin I oversaw the launch of a new concept restaurant at the Lakehouse property called "Knipe Grill '' focusing on local Cumbrian produce from our farm with a big view on sustainability and locality. Within 3 months of opening, we were selected as one of Michelin's favourite new openings and awarded a place in the Michelin guide.
I also curated a relaunch and a new menu for another restaurant at the Gilpin called Gilpin Spice focusing on Cumbrian-inspired Pan Asian food.
- Achieved 2AA Rosettes and entry in Michelin guide for both restaurants
- Achieved 5-star hygiene award for both restaurants
- Took part in the Great British Menu for 2023
Crockers Henley / Executive Head Chef

During my time at Crockers In Henley-on-Thames, I oversaw the opening of a new restaurant concept with 2 chefs' tables, a 55-seater à la carte restaurant with rooms.
